Kitchen Time with Mum

My mum happens to be the best cook in the whole entire world. Well, maybe not the whole world, but probably the best in the state. Every time I go home to visit, my mum and I make something in the kitchen. Whatever we make, it is required to have at least 5 million calories. So this time it was Chocolate Peanut Butter Cup Cookies!!!! 

Incase you are wondering...
2 1/4 cup flour, 1/3 cup cocoa, 1 tsp baking soda, 1/2 tsp salt, 1 cup butter, 3/4 cup smooth peanut butter, 3/4 cup brown sugar, 3/4 cup sugar, 1 tsp vanilla, 2 large eggs, 5 2oz packages of Reece's Peanut Butter Cups, 3/4 cup of chocolate chips. 
  

Combine the dry ingredients: cocoa, flour, baking soda, and salt.


Mix them up and set it aside. 

Mum mixed the peanut butter, butter, sugar, brown sugar, and vanilla.


While your mum is running the electric mixer, unwrap Reece's Peanut Butter Cups. A lot of them if you know what I mean. 

Find the largest knife you can and chop them into pieces. Just be careful to not lop off a finger as you try photographing an action shot of yourself chopping up the Reese's Peanut Butter Cups!

Chop up enough to make about a cup.


Clean up wrappers


Next, add the 2 eggs to the mixer. If you're cool like me and my mum, you will get your eggs by walking out the barn and collecting them from the chickens. 


Next, add the dry ingredients to the mixer. 

Instead of using chocolate chips, we used CHOCOLATE CHUNKS! And instead of 3/4 of a cup, we use 1 FULL CUP!!!! I'm such a rebel.

Look at this. Beautiful. Wonderful. It's Heaven in a bowl. But you can't even see the chocolate chunks. Maybe I'll add 2 cups next time. 

This is when you take a HUGE spoonful of the batter....


...and EAT it!!!!

Next Instruction: Continue eating the batter by the spoonful until you devour the entire bowl. Next, go change into sweatpants, because the buttons on your jeans have broke. 
Then start over at step #1 and make a whole new batch of batter.

Now that you have a new batch of batter, take a cookie scooper and start scooping balls of  batter. 

Do NOT spray the pans! Place the batter balls on the UN-GREASED pan by the dozen (4 x 3 on each pan). 

Get the Reese's ready! 

Place 3-4 pieces of Reese's on top of each cookie.

Place pan in the oven at 350 degrees. Leave in for 8-10 minutes or until done. Or if you're anything like me, you don't bake them all the way, so when you bite into the cookie, it's really chewy and soft. 

Take cookies out of the oven. WARNING: Use hot pads when removing anything from a hot oven! I learned this the hard way.

And look....It's magnificent! You can just smell the awesomeness! 

Put on cooling rack so the cookies can cool. No way, really? Cooling racks cool things?
