Tasty Tuesday!

I haven't blogged a Tasty Tuesday post in such a long time, and I'm sorry about that! 


Whenever I mention 'Tasty Tuesday' to someone, they are like 'whaaa iz dat?' So to sum it up for you, I love to eat, and I love to cook, and I always take pictures of my food. Add those together, put it on my blog and BOOM you have yourself a 'Tasty Tuesday' blog post. 


Just to warn you, I have been eating healthier than usual lately, which is good. But if I start going on a random lecture about health foods, and vegetables ect, just ignore me. 


And guess what?! I have a whole day of meals to share with you! And I am very proud of each and every one of them! Mostly because I made up the recipes all by myself! And NO, none of the pictures have been edited to make the food look more delicious than normal. And no, I am not bragging about being a good cook or anything, I just happen to have lots of happy accidents while working in the kitchen. 


BREAKFAST: Eggs and Vegetables 
Just like regular eggs, but jazzed up a little! 
What I Did: Put a slice of butter in the skillet and turn the skillet on low heat. Once the butter starts to melt, crack your eggs into the skillet. Sprinkle with salt, pepper, and garlic (Yes, garlic! Trust me, it's amazing!). Instead of flipping the eggs over, just sprinkle a handful of water on top of them while they are cooking, which will cause them to cook all the way through without having to flip them! (my roommates Grandmother taught me this! Which works really well! Plus I'm soooo bad at flipping eggs! Haha)
As they are cooking, I chopped up fresh spinach leaves, tomatoes, and onions, sprinkling them on top of the eggs. I always put a lid on top of the eggs, and let them cook nicely. 
Check the bottom of the eggs and make sure they are a golden brown. That's when I turn off the stove, add a handful of shredded mozzarella cheese, put the lid back on and let the cheese melt on top of my eggs and veggies. Once the cheese has melted, EAT UP!


These are FULL of flavor with all the garlic, cheese, and veggies. And who says you can't have veggies for breakfast? Besides that, my eggs were slightly yolky in the middle, which is just the way I like it!    


LUNCH: Broccoli with Cheesy Garlic Butter
Okay, I'll admit it, I am obsessed with broccoli. I love it. Plus it's super good for your digestive system and has tons of fiber in it! 
I like to either steam my broccoli, or else put it in a stir-fry. This time I put it in a skillet with a little butter or olive oil. As it's cooking, sprinkle dump salt and pepper on top for flavor. Half way through eating my lunch of broccoli, I decided it needed cheese sauce. So I mixed mozzarella cheese, garlic salt, and butter together, melted it, and drizzled it over my seasoned broccoli. It. Was. Amazing. (Cheese sauce not pictured) 

SUPPER: Chipolte
Everybody loves Chipolte, right? Well, as I was mixing vegetables and stuff together I randomly thought "hey this reminds me of chipolte!" So I guess this is Chipolte-inspired meal! If I had meat on hand, I would have added it, but this one happens to be a vegetarian dish! Again. 
And it's very easy! Steam rice. Cook organic black beans. Chop up onions, tomatoes, and spinach. Dump in a bowl together, add some shredded cheese, and BOOM! You now have your very own version of Chipolte. Feel free to be creative, adding ranch or sour cream, meat (chicken or steak), and substituting vegetables such as corn or salsa.  

DESSERT: Peach Cream Pie
Okay, I'm not gonna lie, I made this recipe up all on my own! And I'm very proud of it! It tasted amazing and I couldn't help but to brag to my mum and friends about this pie I made! I looked up a ton of different recipes online and just decided to make my own. I completely guessed on amounts, and it turned out really good! And a big thanks to my parents who sent a bunch of peaches with me last time I was home! I didn't know what to do with all of them, and my roommate suggested I make a pie. Good suggestion.  

Crust: 1 package of crushed Graham Crackers combined with 2/3 cup Butter and 1/4 cup Sugar. Mix together and press into the bottom of a foil pie plate (be sure to save out a handful of graham cracker stuff for later). Bake in the oven for 10 minutes at 350 degrees. Filling: Combine 1 Egg, 1/2 stick of Butter, 1 Tbs of Cinnamon, 1 can (14oz) of Sweetened Condensed Milk, and 2-3 cups of fresh cut and peeled Peaches. Cream Topping: 50% Cool Whip and 50% Cream Cheese. Add Almond extract or vanilla for extra flavoring.


Once the crust comes out of the oven, pour the peach filling into the pie crust. Don't overfill the pie, like I did! Any extra filling can be put into a glass bowl and baked separately for a snack! After you fill the pie, take the extra crumbs that were used for the crust and sprinkle them on top of the pie. Add a few more dashes of Cinnamon. Cover the pie in foil, and baked at 350 degrees for 30 minutes. Let it sit and chill for a bit before serving it.  


I'm not even kidding, that night when my roommate came into the apartment she said "Why does our apartment smell delicious?" Haha it was seriously a kitchen experiment gone right! And honestly, I don't even like pie very much at all, but it was very yummy! I sent a few pieces home with my roommate's boyfriend and his roommates and they all loved it! The crust is not your typical dry or crispy crust, it was very moist (probably because I added an extra 1/2 stick of butter compared to what most of the recipes recommended!) But it was very creamy and sweet! Hope you all try this and enjoy it as much as I did! And YES I am putting this Pie recipe in my cookbook I'm working on!

  1. Everything sounds(and looks)delicious! One question....how do you measure a "handful" of water?

  2. literally a handful of water. i cup my hand under the Fawcett in the sink and however much water can fit in my hand is how much i dribble over the eggs. i use one handful of water for ever two eggs. hope that helps! :)
