Alfredo Potato

It's Tuesday....which means it's TASTY TUESDAY!!! Ok, so I've been DYING to share this with you for like a WHOLE ENTIRE 5 days!! 

At my nanny job, the 4 year old has this 'Sesame Street Cook Book'. No joke. So I was flipping through it one day to see if it had any good ideas of what to make for lunch. And I ran across a potato recipe (and since the pantry had potatoes on hand, I decided to be productive during the kids' nap time!) 

I don't really like taking orders.....from people or cookbooks. Mostly cookbooks. So I took this super simple recipe and added a few TONS of ingredients that normal people never think of adding to a potato. Oh, I even changed the cooking times just because I'm THAT rebellious. Ya I told you I don't like rules. Especially cookbook rules. I think a cook should be able to do whatever he or she wants. Who needs measurements or recipes?

ALFREDO POTATO: 
-Wash Potatoes in cold water. Any large potato will work. I used Red-Skin Potatoes. 
-Drench them in Olive Oil, and then cover with lots of salt, pepper and garlic salt. 
-Poke several times with a fork/knife. Or if you've had a bad day, stab vigorously with a fork. And then once you have released all your anger out on the potato, place on baking sheet in oven at 400 degrees. 
-Bake for 50mins-1hour.
-Take potatoes out, cut in half, and then with a spoon, scoop out the inside of potato, leaving about 1/4 inch of skin/potato along edges.
-Place innards of potato into medium to large glass bowl. 

Add to Potato Innards: (Portions are for just 1 potato)
When I say 'Tablespoon' I mean a HEAPING tablespoon!!!
-1 Tbs Soft Butter
-1 Tbs Mayo, or more if you like your potatoes creamy!! (I love the mayo that is made with Olive Oil!! Mmm!!)
-2 Tbs Alfredo Sauce!!!!
-Approximately 6 shakes of Parmesan Cheese
- Small Handful of Shredded Cheddar Cheese (Mozzarella Cheese tastes pretty good in these potatoes too!!) 
-Small Handful of Bacon Bits (please Please PLEASE not the boughten kind. Just fry your own, and chop to small pieces. The taste is SO much better!) 
-Add lots of Salt, Pepper, and Garlic Salt

After you mix this all up, spoon it back into the potato skins, add a few sprinklings of shredded cheese on top, then bake again for another 10mins-15mins at 400 degrees.

After it comes out of the oven, feel free to add a spoonful of sour cream, or drizzle ranch dressing on top, or if you ANYTHING LIKE ME, you'll add MORE CHEESE!!! 


I hope you guys love these as much as my mum did. Because she really Really REALLY liked them. In fact, she's been eating Alfredo Potatoes for almost a week straight. Ya, there that addicting. Oh, and by the way, my mum is the one who came up with the name 'Alfredo Potato'. Pretty cool, huh?
