Tasty Tuesday

This is a PUMPKIN SPICE MUFFIN recipe from Panera Bread!!!! 

Here's what a finished batch looks like! Mmmm! If you like what you see, keep reading to find out how they were made! 

What you need: 1.5 cups of all-purpose flour, 1tsp of baking powder, 1 cup caned solid-pack pumpkin (15oz can), 1/3 cup vegetable oil, 2 large eggs, 1tsp pumpkin-pie spice (a combo of cinnamon and nutmeg), 1.25 cups plus 1 Tbsp sugar, 1/2 tsp baking soda, 1/2 tsp salt, and 1 Tbsp cinnamon. Just FYI (for your information), we tripled the batch!

Take liners and place them in the muffin cups.

Then pre-heat the oven to 350 degrees.

Mix together in a small bowl, the flour and baking powder, then set it aside.

Whisk together pumpkin, oil, eggs, pumpkin-pie spice, 1.25 cups of sugar, baking soda, and salt in a large bowl.

 And since I was making these to take to a family get-together, and they should have been in the oven 30 minutes ago, I asked my sister to help! The more helping hands, the better!! Right???

HA! Are you kidding me? No offense, but Heather couldn't even bake a frozen pizza!! Seriously! I have a story about that...maybe another time I'll share it. But we were rushing so badly to get this made and put in the oven! 

Next, take the bowl of flour and baking powder that you set aside and add it to the gooey orange mixture in front of you. 

Wait a second...Does this look familiar? Thanks go to my sister for playing in the flour rather than helping me make muffins.

 Combine the dry mixture with the wet mixture, like the pictures show.


Then using two spoons, scoop out a blob of batter, and place in the muffin cups. Make sure they are about 3/4 full. 

Continue scooping batter until the bowl is empty.

Next, mix together the cinnamon and remaining 1 tablespoon of sugar in a bowl, and sprinkle it on the tops of un-baked muffins.

 We ran out of muffin trays, and decided to make some 'mini-loaves'. 

Put them on the middle rack in the oven, and bake for 25-30 minutes.

Mmmmmmmm!
